The Gemini Multi-tier
non-stabilized proofer can be utilized in any final proofing or retarding application for pan and board product.

  • Available with single, double or triple level trays.  Width and  number of trays are selected for the application.
  • Single or double infeed and outfeed configurations for high throughput rates.

The Gemini System offers the following features and benefits:
  • Minimum space requirements
    - Units are available in both a separate “free standing” floor/box configuration or as an in-line overhead configuration.  Units are configured to optimize available “head space”in a facility.
  • Minimum power requirements
    - Systems require 2 to 5 horsepower in comparison to spiral type systems that require between 30 and 50 horsepower.
  • Minimum maintenance requirements
    - Low center of gravity tray design is superior to a tray proofer that utilizes stabilizing rollers and rails.  Simpler design and operation significantly reduces maintenance requirements.
    - Balll bearing supported chain reduces chain drag and stretching, resulting in a longer chain life and lower power requirements.
  • Accommodates a wide variety of pan/board sizes.
  • Stainless Steel (ANSI 304) main frame structure and proofing trays are standard.
  • Proofer can be supplied in a 1,2 or 3 tier (level) per tray depending on pan/board sizes and production speed requirements.
  • Systems can be supplied as a final proofer, a retarder or as a combination final proofer/retarder. 
  • Systems are available in a wide range of custom sizes and configurations to accommodate your production needs.  Maximum production capacity is accommodate your production needs.
The Exterior

Stainless steel enclosure available. 
Accessible platform mounted conditioning unit.
Consistent temperature and humidity levels throughout proofer/retarder.
 
The Infeed

Infeed with lug-style pushing devices for peel boards and pans. Gentle pan and board handling at infeed and discharge and positive unloading of boards or pans.
 
The Trays

Typical two-level, multi-tier stainless steel trays.  
 
The Discharge

Dual-lane discharge for high board/pan capacities. Proofed product exits a dual-lane discharge and is now ready for the next stage of the production process.
